  1. In a large bowl, beat eggs with sugar until a thick, lush foam is obtained.
  2. Add slaked soda and flour to them.
  3. Spread the dough on a baking paper with a spoon, which you need to cover a large baking sheet. From the dough, form not one large cake, but many small cake layers.
  4. Heat the oven to 180 degrees, bake the crusts until golden brown.
  5. For cream, combine and whip the condensed milk with a mixer with sour cream.
  6. Each dumpling cake is well dipped in cream, and then form a tortoise shell out of them on a large dish. It is important that all layers of the cake are densely saturated with cream, otherwise the cake will turn out dry.
  7. Small cakes are needed to form the tail, head and legs of the turtle, put them next to the shell, but do not soak in the cream. On the head, then with melted glaze, draw the mouth and eyes of the turtle.
  8. From these ingredients, cook the glaze, mixing everything and bringing to a boil over low heat, continuously stirring. Decorate the cake with icing on top.

  • Eggs - 6 pcs.
  • Cocoa - 3-4 tbsp. l
  • Flour - 150 gr.
  • Sugar - 120 gr.
  • Baking powder - 5 gr.

  • Condensed milk - 150 gr.

Cooking process:

  1. For dough, beat the sugar with eggs until fluffy.

  6. Bake them in the oven for 5-7 minutes. The oven should already be preheated to 180 degrees.
  7. Remove the finished cakes hot from the paper, otherwise they will stick.
  8. While the cakes are cooling, make a cream by mixing sour cream and condensed milk with powdered sugar or sugar. To make the cream more magnificent, it can be whipped with a mixer.
  9. Put the chocolate cakes on a flat dish, a little oiled with cream. Make a high tortoise shell by dipping the tortillas into the cream.
  10. From individual small cakes, make a head, ponytail and paws, they do not need to be lubricated with cream.
  11. Chocolate, melted in a water bath and mixed with butter, decorate the cake on top, waiting until the cream hardens a little, otherwise the chocolate will melt.
  12. Soak the cream cake cakes in the refrigerator for at least 5-6 hours.

Emerald Turtle Cake with Kiwi

Such a cake is good because it is baked in a pan, and then it is simply coated with cream. You must admit that it is simple and convenient, and most importantly, it is up to those culinary specialists who are just learning the basics of the simplest baking. And the unusual emerald color of such a "Turtle" went "by inheritance" to the kiwi, with which it is decorated on top.


  • Flour - 400-450 gr.
  • Condensed milk - 1 can.
  • Egg - 1 pc.

  3. Blind each small lump into a ball, and roll the ball with a rolling pin on a dusted surface.
  4. Cakes are baked in a pan without oil, they only need to be pricked with a fork in several places so that they do not rise much. Bake them for several minutes on each side.
  5. Roll separate small rectangular flat cakes for the head, paws and tail.
  6. When the cakes are baked, and will cool on the table, prepare a custard for them. Pour milk into a bowl, enter chicken eggs in it and beat everything together with a whisk.

Tip: if you like sour taste, then add kiwi not only on top in the form of cake decoration, but also lay it inside the carapace between the cakes.

How to cook a turtle cake in a pan?

We suggest you make a very original “Turtle” cake: unlike the classic biscuit cake, ingredients like cottage cheese, cookies and bananas are added here, and this cake does not require baking!


  • Milk - 200 ml.
  • Cottage cheese or curd paste - 200 ml.
  • Cookies - 500 gr.
  • Chocolate - 200 gr.

  • Sour cream - 220 gr.
  • Bananas - 1 kg.
  • Sugar - 210 gr.

Cooking process:

  1. Curd, it should be soft and even liquid, with sugar, beat with a blender until sugar crystals dissolve. You can use powdered sugar instead of sugar.
  2. Immediately begin to collect the “Turtle” without baking in a large round bowl. It needs to be covered with cling film.
  3. Dip each cookie in warm milk, put in a single layer on the bottom of the bowl.
  4. Coat a layer of cookies with a layer of curd cream and put on top bananas, cut into thin circles.
  5. Repeat all layers in the same way (cookies - cottage cheese - bananas) until the ingredients run out. The last layer should be a cookie, slightly greased with cream on top.

  4. Heat the oven to 180 degrees and bake the cakes for about 5 minutes. You can check their readiness with a toothpick - it should be dry if it pierces the finished cake.
  5. Make custard. To do this, separate the yolks from the proteins. Proteins are not needed, but the yolks are well pounded with sugar, adding vanillin.
  6. Then add the flour and stir well so that there are no lumps.

  • 30 g butter

The recipe for cooking at home

  1. Start by making a biscuit for the Turtle Cake. Separate the yolks from the proteins, put the yolks in the refrigerator, and leave the yolks at room temperature for 15 minutes. Sift flour into a bowl with a baking powder through a sieve, if desired, you can do this twice. If you want cookies to be chocolate-colored, add a spoonful of cocoa powder. If not, you can replace it with flour.
  2. Preheat the oven to 180C, cover the baking sheet with parchment paper. Combine the yolks in a bowl and begin to beat with a mixer at low speed. Add sugar and vanilla sugar in a thin stream. Gradually increase speed to maximum.
  3. Beat the yolk mass until a light fluffy mass is formed. To the obtained egg cream mix the flour mixture. Remove proteins from the refrigerator and beat with a mixer until stable peaks. Stir the protein into the dough. Put cookies on the laid baking sheet (1 tbsp each).
  4. Bake biscuit cookies for about 15 minutes until cooked. Take out the baking sheet and carefully place the cookies on the wire rack, leave it to cool. Make a cream of sour cream for the tortoise cake.
  5. Remove the oil from the refrigerator and leave it warm for 15 minutes to make it soft. Then beat it with a mixer until splendid (2 minutes). Without ceasing to beat the butter, pour sugar in a thin stream and beat for another 3-4 minutes until it is completely dissolved.
  6. Reduce the mixer speed to medium and add all the sour cream on a spoon. Beat sour cream until completely homogeneous. Set aside about 10 pieces of cookie to decorate the tortoise cake.
  7. Put the rest of the cookies on a large flat dish in this way: dip each one on both sides in a sour cream and put on a dish. When one layer is ready, cover it with a second layer of cookies with cream, a third, etc.
  8. Shape the tortoise shell. When all cookies (except deferred) and cream are over, prepare the icing for the cake. Break the chocolate into small pieces and put in a small container. Pour milk into the chocolate and place in a water bath.
  9. While stirring, heat the chocolate with milk until completely dissolved. Remove the container from the water bath, add oil and mix thoroughly until it dissolves, allow the chocolate glaze to cool to room temperature.
  10. From the previously set aside cookies (10 pieces) make the tortoise shell (do not grease it with cream), paws and head. Cover the message cake (except for the “paws”) with chocolate icing. On the "head" of the turtle put eyes from the dragee. Optionally, you can not make the legs and head of the turtle, you get just round cake, as in the photo.
  11. Leave the tortoise cake with sour cream for 4-6 hours in the refrigerator for impregnation. Then remove the dish from the refrigerator, cut into portions and serve. Bon Appetit!
